  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Radishes, for garnish

Instructions

Preheat your oven to 425°F (220°C). In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until well coated. Spread the cauliflower in a single layer on a baking sheet and roast for about 20-25 minutes, or until golden brown and crispy, flipping halfway through. While the cauliflower is roasting, prepare the avocado lime crema by blending the avocado, Greek yogurt, lime juice, and a pinch of salt in a food processor until smooth. Warm the corn tortillas in a skillet or directly on the stovetop. Once the cauliflower is ready, assemble your tacos by placing a generous amount of roasted cauliflower in each tortilla, drizzling with avocado lime crema, and garnishing with fresh cilantro and radishes.
