Ingredients
- 1 can of chickpeas, drained and rinsed
- 2 cups fresh spinach, chopped
- 1/2 cup green onions, finely chopped
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1 egg, beaten
- Oil for frying
Instructions
In a large bowl, mash the chickpeas with a fork until mostly smooth, leaving some chunks for texture. Add the chopped spinach, green onions, Parmesan cheese, garlic, cumin, paprika, salt, pepper, parsley, and the beaten egg. Mix everything until well combined. Gradually add the flour, mixing until the batter holds together but isn't too dry.
Heat oil in a skillet over medium heat. Once hot, drop spoonfuls of the chickpea mixture into the skillet, flattening them gently. Fry for 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels. Serve warm with yogurt or your favorite dipping sauce.
