  • 1 cup breadcrumbs

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 2 large eggs
  • 1 teaspoon olive oil
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese for dip
  • 1 tablespoon fresh parsley, chopped

Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Slice the zucchinis into fry-shaped pieces. In a shallow bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. In another bowl, whisk the eggs and olive oil together. Dip each zucchini piece into the egg mixture, then coat it in the breadcrumb mixture, pressing slightly to adhere. Place the coated zucchini fries on the prepared baking sheet in a single layer. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy. While the fries are baking, prepare the Garlic Parmesan Dip by mixing together Greek yogurt, mayonnaise, minced garlic, lemon juice, grated Parmesan cheese, and chopped parsley in a small bowl.
