Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1 avocado
- 1 lime, juiced
- 1/4 cup chopped cilantro
- Optional toppings: diced red onion, salsa, or feta cheese
Instructions
Preheat the oven to 425°F (220°C). In a large bowl, toss the diced sweet potatoes and chickpeas with olive oil, cumin, smoked paprika, garlic powder, salt, and pepper until well coated. Spread the mixture on a baking sheet lined with parchment paper and roast for 25-30 minutes, or until the sweet potatoes are tender and lightly caramelized.
While the veggies are roasting, prepare the avocado lime sauce by blending the avocado, lime juice, cilantro, and a pinch of salt until smooth. Once the sweet potatoes and chickpeas are out of the oven, warm the tortillas briefly in a dry skillet or microwave. Assemble the tacos by placing the roasted sweet potato and chickpea mixture in each tortilla, and drizzle with avocado sauce. Add your choice of optional toppings and serve warm.
