- 8 oz pasta of choice
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 1/4 tsp red pepper flakes (optional)
- Fresh parsley for garnish
Instructions
Cook the pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and stir until combined. Add the grated Parmesan cheese, salt, and pepper. Cook for 2-3 minutes until the sauce thickens slightly.
Add the fresh spinach to the skillet and sauté until wilted, about 2 minutes. Toss the cooked pasta into the sauce, mixing well to ensure the pasta is evenly coated. If desired, add red pepper flakes for a little heat.
Serve warm, garnished with fresh parsley and additional Parmesan cheese if desired.
