Ingredients

  • 8 oz penne pasta
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup breadcrumbs

Instructions

Preheat your oven to 350°F (175°C). Cook the penne pasta according to package instructions until al dente. Drain and set aside. In a large mixing bowl, combine the cream cheese, sour cream, minced garlic, oregano, salt, and pepper. Mix well until smooth. Stir in the chopped artichoke hearts and spinach until evenly coated. Fold in the cooked pasta, half of the shredded mozzarella, and half of the Parmesan cheese. Transfer the pasta mixture to a greased 9x13 inch baking dish. Top with the remaining mozzarella and Parmesan cheese, followed by the breadcrumbs. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown. Let it cool slightly before serving.
