Ingredients

  • 300g pasta (penne or rigatoni)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 250g mushrooms, sliced
  • 200g fresh spinach
  • 400ml heavy cream
  • 200g shredded mozzarella cheese
  • 100g grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

Preheat the oven to 180°C (350°F). Cook the pasta according to package instructions until al dente, then drain and set aside. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent. Add the sliced mushrooms and cook until they are softened. Then, stir in the fresh spinach until wilted. Pour in the heavy cream, and let simmer for a few minutes until slightly thickened. Mix in half of the mozzarella and the Parmesan cheese, stirring until melted. Season with salt and pepper to taste. Combine the cooked pasta with the creamy mushroom and spinach mixture, ensuring everything is well coated. Transfer to a baking dish and top with the remaining mozzarella cheese. Bake in the preheated oven for about 25-30 minutes, or until the top is golden and bubbling. Garnish with fresh parsley before serving.
