Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup fresh spinach, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth but still slightly chunky. Add the chopped spinach, diced onion, minced garlic, breadcrumbs, grated Parmesan cheese, beaten egg, cumin, paprika, salt, and pepper. Mix until well combined. Heat olive oil in a skillet over medium heat. Once hot, scoop spoonfuls of the chickpea mixture and shape them into small patties. Fry in batches for about 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil. Serve warm with your choice of dipping sauce.
