Ingredients
- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 ripe avocado
- 1/2 cup Greek yogurt
- 1 lime, juiced
- Fresh cilantro for garnish
- Cherry tomatoes, halved, for topping
Instructions
Preheat your oven to 400°F (200°C). In a bowl, combine the chickpeas, olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. Spread the spiced chickpeas on a baking sheet in a single layer and roast for 25-30 minutes, until crispy.
While the chickpeas are roasting, prepare the avocado cream by blending the avocado, Greek yogurt, lime juice, and a pinch of salt in a food processor until smooth and creamy.
Once the chickpeas are done, warm the corn tortillas in a dry skillet over medium heat. To assemble the tacos, place a generous spoonful of crispy chickpeas onto each tortilla, drizzle with avocado cream, and top with fresh cilantro and cherry tomatoes. Serve immediately and enjoy!
