- 1 large cauliflower, cut into bite-sized florets
- 1 cup shredded unsweetened coconut
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- Cooking spray or oil for baking
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a bowl, combine the flour, garlic powder, onion powder, salt, pepper, and paprika. In another bowl, beat the eggs. In a third bowl, mix the shredded coconut and breadcrumbs together.
Dip each cauliflower floret first into the flour mixture, then into the eggs, and finally coat it in the coconut-breadcrumb mixture. Place the coated florets on the prepared baking sheet, and spray or brush them lightly with cooking oil. Bake in the preheated oven for about 25-30 minutes, or until golden brown and crispy.
