- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 avocado
- 1 tablespoon lime juice
- 1/4 cup plain Greek yogurt
- 1 small jalapeño, seeded and chopped
- Fresh cilantro, for garnish
Instructions
Preheat your oven to 425°F (220°C). In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until evenly coated. Spread the cauliflower on a baking sheet in a single layer and roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
While the cauliflower is roasting, prepare the spicy avocado cream. In a blender, combine the avocado, lime juice, Greek yogurt, jalapeño, and a pinch of salt. Blend until smooth and creamy, adjusting seasoning to taste.
Once the cauliflower is done, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
