Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

Instructions

Preheat your oven to 425°F (220°C). Wash and cut the russet potatoes into wedges, then place them in a large bowl. Drizzle the olive oil over the potatoes and sprinkle with salt, black pepper, garlic powder, rosemary, and thyme. Toss well to ensure all wedges are evenly coated with the seasoning. Spread the potato wedges in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until the wedges are golden brown and crispy. While the potatoes are baking, prepare the garlic aioli by combining the mayonnaise, minced garlic, lemon juice, and Dijon mustard in a small bowl. Stir until smooth and adjust seasoning to taste. Serve the crispy potato wedges hot with the garlic aioli on the side.
