- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 8 corn tortillas
- 1 avocado, pitted and scooped
- 1/2 cup plain Greek yogurt
- 1 tablespoon lime juice
- Fresh cilantro, chopped, for garnish
Instructions
Preheat the oven to 425°F (220°C). In a large mixing bowl, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, garlic powder, chili powder, salt, and pepper until well coated. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
While the sweet potatoes are roasting, prepare the avocado crema by blending the avocado, Greek yogurt, lime juice, and a pinch of salt in a food processor until smooth and creamy. Once the sweet potatoes are done, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side. Assemble the tacos by placing a generous scoop of roasted sweet potatoes on each tortilla, drizzling with avocado crema, and topping with chopped cilantro. Serve immediately and enjoy!
