- 1 medium head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 ripe avocado
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1/4 cup chopped cilantro
- Lime wedges, for serving
Instructions
Preheat your oven to 425°F (220°C). In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, salt, and pepper until well coated. Spread the seasoned cauliflower on a baking sheet in a single layer and roast for 25-30 minutes, turning halfway through, until golden brown and crispy.
While the cauliflower is roasting, prepare the avocado crema by blending the avocado, Greek yogurt, lime juice, and some salt until smooth and creamy. Once the cauliflower is done, warm the corn tortillas in a skillet or microwave. Assemble the tacos by placing a generous amount of crispy cauliflower in each tortilla. Drizzle with avocado crema and garnish with chopped cilantro. Serve with lime wedges on the side.
