- 2 medium zucchinis, grated
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 2 large eggs, lightly beaten
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 1/4 cup vegetable oil for frying
Instructions
Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. In a large bowl, combine the flour, baking powder, garlic powder, salt, and black pepper. Add the drained zucchini, feta cheese, eggs, parsley, and green onions into the dry ingredients and mix well until combined.
