Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 4 cups carrots, chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1 can coconut milk
  • Fresh cilantro for garnish

Instructions

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant. Add the ground cumin, ground coriander, and cayenne pepper, and cook for an additional minute. Add the chopped carrots and vegetable broth to the pot. Bring to a simmer and cook until the carrots are tender, about 20 minutes. Remove from heat and let cool slightly before blending the soup until smooth. Return the soup to the pot, stir in the coconut milk, and season with salt and pepper to taste. Heat gently before serving. Garnish with fresh cilantro.
