Ingredients

  • Vegetable broth
  • White wine
  • Olive oil
  • Butter
  • Garlic, minced
  • Onion, finely chopped
  • Fresh thyme leaves
  • Cremini mushrooms, sliced
  • Parmesan cheese, grated
  • Salt
  • Black pepper

Instructions

In a medium saucepan, heat the vegetable broth and keep it on low heat to simmer. In a large skillet or heavy-bottomed pot, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Stir in the Arborio rice and toast it for a minute until it becomes slightly translucent. Pour in the white wine and let it simmer until fully absorbed. Gradually add the warmed vegetable broth, one ladleful at a time, allowing the rice to absorb each addition before adding the next. Stir frequently. When the rice is creamy and al dente, about 18-20 minutes, stir in the sliced mushrooms and fresh thyme. Cook for an additional 5 minutes until the mushrooms are tender. Remove from heat and fold in the grated Parmesan cheese. Season with salt and black pepper to taste, and serve immediately.
