- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cherry tomatoes, halved
- 1 cup green beans, trimmed
- Fresh parsley for garnish
Instructions
Preheat your oven to 400°F (200°C). In a large bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Add the chicken thighs to the bowl and coat them well with the marinade. Let them marinate for at least 20 minutes, or up to 2 hours in the refrigerator for more flavor.
In a baking dish, arrange the marinated chicken thighs skin-side up. Scatter the cherry tomatoes and green beans around them. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from the oven, garnish with fresh parsley, and serve warm.
