Ingredients

  • 2 pounds boneless chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

In a large bowl, whisk together the olive oil, lemon juice, garlic, parsley, thyme, rosemary, salt, and pepper. Add the chicken cubes and toss until they are well coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor. Preheat your grill or oven to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken onto the skewers, leaving a little space between each piece. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
