Ingredients

  • 1 pre-made pie crust
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 cup milk
  • 4 large eggs
  • 1/2 cup grated cheese (cheddar or feta)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Optional: fresh herbs for garnish

Instructions

Preheat your oven to 375°F (190°C). In a skillet, heat olive oil over medium heat, then add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let cool slightly. In a large bowl, combine the chickpeas, sautéed spinach, milk, eggs, cheese, garlic powder, onion powder, salt, pepper, and lemon juice. Mix well until all ingredients are evenly incorporated. Pour the mixture into the pre-made pie crust and spread evenly. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. Allow to cool for 10 minutes before slicing. Garnish with fresh herbs if desired and serve warm or at room temperature.
