Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1/2 cup breadcrumbs
- 1/4 cup green onions, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 clove garlic, minced
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg, beaten
- 2 tablespoons olive oil for frying
Instructions
Boil sweet potatoes in salted water until tender, about 15-20 minutes. Drain and mash in a bowl until smooth. Allow to cool slightly. Stir in breadcrumbs, green onions, parsley, garlic, onion powder, salt, pepper, and egg until well combined.
Heat olive oil in a skillet over medium heat. Form the sweet potato mixture into small patties, about 2-3 inches in diameter. Fry the cakes in batches until golden brown and crispy on both sides, about 4-5 minutes per side. Drain on paper towels and serve warm with yogurt or sour cream on top.
