  • 1 can of chickpeas, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese or nutritional yeast
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent. Stir in the chopped spinach, and cook until it wilts down. Mix in the chickpeas, cumin, smoked paprika, salt, and pepper, cooking for another 2-3 minutes. In a bowl, combine the breadcrumbs, Parmesan cheese (or nutritional yeast), lemon juice, and fresh parsley. Spread the chickpea and spinach mixture evenly in a baking dish, then top it with the breadcrumb mixture. Bake in the preheated oven for about 25-30 minutes or until the topping is golden brown.
