Ingredients

  • 1 cup arborio rice
  • 1 cup pumpkin puree
  • 1 medium onion
  • diced
  • 2 cloves garlic
  • minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh sage
  • chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh sage leaves for garnish

Instructions

In a saucepan, heat the vegetable or chicken broth and keep it warm over low heat. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant. Add the arborio rice to the skillet, stirring to coat it in oil. Toast the rice for 1-2 minutes. Pour in the white wine, allowing it to absorb completely while stirring constantly. Begin adding the warm broth one ladle at a time, stirring continuously, and only adding the next ladle once the previous one has been absorbed. After about 15 minutes, stir in the pumpkin puree and chopped sage, mixing well. Continue adding broth until the rice is creamy and al dente, which should take about 20-25 minutes in total. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste. Serve warm with fresh sage leaves for garnish.
