Ingredients
- 2 salmon fillets
- 2 tbsp honey
- 1 tbsp chipotle in adobo sauce (pureed)
- 1 tsp smoked paprika
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1 ear corn (husked)
- ½ avocado (diced)
- ½ cup cherry tomatoes (halved)
- ¼ red onion (finely chopped)
- 1 tbsp fresh cilantro (chopped)
- 1 tbsp lime juice
- 1 tsp olive oil
- Salt and black pepper to taste
Instructions
Preheat oven to 400°F (200°C)
In a small bowl, mix honey, chipotle puree, smoked paprika, salt, and black pepper
Heat a skillet over medium-high heat with 1 tbsp olive oil
Sear salmon fillets skin-side down for 3 minutes
Flip the salmon and brush with the honey-chipotle glaze
Transfer to the oven and bake for 10-12 minutes
While salmon is cooking, roast the corn directly over an open flame or in a hot skillet until slightly charred
Let cool, then cut kernels off the cob
In a bowl, combine roasted corn, avocado, cherry tomatoes, red onion, cilantro, lime juice, olive oil, salt, and pepper
Mix well
Serve salmon with roasted corn salsa on top
