Instructions

Instructions: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potato and cook for about 8-10 minutes, stirring occasionally, until they begin to soften. Add the diced red onion and bell pepper to the skillet. Cook for an additional 5 minutes, stirring often, until the onions and peppers are tender. Stir in the minced garlic, smoked paprika, and cumin; cook for another minute until fragrant. Add the chickpeas, and season with salt and pepper to taste.
