In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and let cool slightly.
In a large mixing bowl, combine the cooked quinoa, chopped spinach, feta cheese, breadcrumbs, beaten eggs, minced garlic, oregano, salt, and pepper. Mix until all ingredients are well incorporated.
Form the mixture into patties, about 2-3 inches in diameter. Heat olive oil in a large skillet over medium heat. Fry the quinoa cakes in batches for about 4-5 minutes on each side, or until golden brown and crispy.
Transfer the finished cakes to a paper towel-lined plate to drain excess oil. Serve warm with your choice of dipping sauce or a side of salad.
