Ingredients

  • 1 package (14.1 oz) refrigerated pie crusts
  • 1 lb chorizo sausage
  • casings removed
  • 1 large onion
  • thinly sliced
  • 2 cloves garlic
  • minced
  • 1/2 cup Manchego cheese
  • shredded
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 1 egg
  • beaten (for egg wash)

Instructions

Preheat oven to 375°F (190°C). Sauté the onions in olive oil until caramelized. Add the chorizo and cook until browned, breaking it up with a spoon. Stir in garlic, paprika, and cumin. Season with salt and pepper. Remove from heat and stir in Manchego cheese and parsley. Unfold pie crusts and cut out circles using a 4-inch cookie cutter or glass. Spoon chorizo mixture into the center of each circle. Fold the dough over to form a half-moon shape, pressing the edges firmly to seal. Crimp the edges with a fork. Brush the empanadas with beaten egg. Bake for 20-25 minutes, or until golden brown. Let cool slightly before serving.
