Ingredients

  • Fresh spinach leaves, chopped
  • Crumbled feta cheese
  • Onion, finely chopped
  • Garlic, minced
  • Olive oil
  • Ground nutmeg
  • Salt
  • Pepper
  • Phyllo dough (1 package, thawed)
  • Butter, melted
  • Sesame seeds (optional, for topping)

Instructions

Preheat the oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until they are translucent. Stir in the chopped spinach and cook until wilted. Season with nutmeg, salt, and pepper. Remove from heat and let the mixture cool slightly. In a large bowl, combine the spinach mixture with crumbled feta cheese. Lay out one sheet of phyllo dough on a clean surface, brush with melted butter, and layer another sheet on top. Repeat this step until you have 3 sheets stacked. Place a portion of the spinach-feta mixture along one edge of the phyllo, leaving a border, then roll it up tightly to form a strudel. Place seam-side down on a parchment-lined baking sheet. Repeat with the remaining phyllo and filling. Brush the tops with more melted butter and sprinkle with sesame seeds if using. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy. Let cool for a few minutes before slicing and serving warm.
