- Beef sirloin

- Carrots

- Spinach
- 1 cup
- Shiitake mushrooms

- 2 cloves
- Soy sauce
- 2 tbsp
- Gochujang (Korean chili paste)

Instructions
Soak sweet potato noodles in warm water for at least 20 minutes to soften. Meanwhile, thinly slice the beef, carrots, onions, and mushrooms. Mince the garlic and green onions. In a bowl, whisk together soy sauce, gochujang, sesame oil, and sugar. Heat vegetable oil in a wok or large skillet over medium-high heat. Stir-fry beef until browned. Add onion and garlic, cooking until softened. Add carrots and mushrooms, cooking until slightly tender. Add spinach and cook until wilted. Drain noodles and add them to the wok. Pour the sauce over the noodles and vegetables, tossing to coat everything evenly. Cook until the sauce thickens slightly. Garnish with sesame seeds and green onions. Serve hot.
