  • 1 can diced tomatoes
  • 1 teaspoon ground cumin

  • 1/2 teaspoon cayenne pepper
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Stir in the minced garlic, cumin, smoked paprika, and cayenne pepper, cooking for an additional minute until fragrant. Add the drained chickpeas and diced tomatoes to the pot, stirring to combine. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 15 minutes, allowing the flavors to meld together. After 15 minutes, add the fresh spinach to the stew and cook for another 5 minutes until wilted. Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
