  • 1 green bell pepper, diced
  • 1 small onion, diced

Instructions

Instructions: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes in a tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer and roast for about 20 minutes, or until tender and slightly caramelized. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chorizo and cook until browned and cooked through, about 5-7 minutes.
