Ingredients

  • Kimchi (1 cup)
  • Green onions (2

  • All-purpose flour (1/2 cup)
  • Rice flour (1/4 cup)
  • Egg (1
  • lightly beaten)
  • Water (1/4 cup)
  • Gochugaru (Korean chili flakes) (1-2 teaspoons
  • adjust to taste)
  • Salt (1/2 teaspoon)
  • Vegetable oil (for frying)

Instructions

Combine kimchi, green onions, all-purpose flour, rice flour, egg, water, gochugaru, and salt in a large bowl. Mix well until just combined. Don't overmix. Heat a thin layer of vegetable oil in a large skillet or griddle over medium heat. Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes per side, or until golden brown and crispy. Serve immediately with your favorite dipping sauce.
