  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable or chicken broth
  • 1 cup dry white wine
  • 1/2 cup grated Parmesan cheese

Instructions

In a medium saucepan, heat the broth and keep it warm over low heat. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms have released their moisture and are tender. Add the Arborio rice to the skillet and toast it for 1-2 minutes, stirring frequently. Pour in the white wine and stir until fully absorbed by the rice.
