- 1 large head of cauliflower
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped

Instructions
Preheat your oven to 400°F (200°C). Remove the leaves from the cauliflower and slice it into 1-inch thick steaks. You should get about 2-3 good steaks, depending on the size of your cauliflower. Lay the steaks flat on a baking sheet lined with parchment paper.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for about a minute until fragrant. Stir in the chopped parsley, thyme, salt, and pepper. Drizzle the garlic herb butter over both sides of the cauliflower steaks. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is tender and golden brown.
