  • 4 chicken thighs, skin-on and bone-in
  • 2 medium zucchinis, sliced
  • 2 carrots, sliced
  • 1 onion, quartered
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced

  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

Preheat the oven to 400°F (200°C). In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
