Ingredients
- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced
- Lime wedges, for serving
Instructions
In a large bowl, combine the shrimp, olive oil, minced garlic, lemon juice, lemon zest, chili powder, salt, and black pepper. Toss until the shrimp are evenly coated and let marinate for 15 minutes.
Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat.
In a separate bowl, mix shredded cabbage and cilantro. Warm the corn tortillas in the skillet or microwave. To assemble the tacos, place a few shrimp in each tortilla, top with cabbage slaw and sliced avocado. Serve with lime wedges on the side.
